Kochi is a sake with a slightly lighter and cleaner taste that evokes the warm weather of Spring.
“Gohyakumangoku”, a sake rice from Kyoto, is perfect for making a spring-like impression. A finish with slight bitterness and acidity reminds you of the wild mountain sprouts that signal the arrival of Spring. As the sake is unfiltered, some rice components may remain in the bottle. It is unpasteurized so you will also sense the lively yeast notes.
